I was looking for situations where one character actually imitates another's voice, rather than just repeating his words. I guess your first one (the Gaffer) qualifies, although it was not one of the two I was thinking of. Try to think of one (or two) more.

I know that Gandalf imitated the voices of the three Trolls in the Hobbit to save the dwarves... but apart from that I cannot think of another instance apart from the nowt but a ninnyhammer quote...

I'll give it to WitW. Gandalf imitating the trolls was definitely one; Gandalf also imitated Gollum for Frodo's benefit in "Shadow of the Past", and Pippin imitated Gollum when Grishnakh was searching Merry and him for the ring in "The Uruk Hai".
